Blender Pancakes

1 cup wheat berries
1 1/2 cup milk, divided
2 eggs
1/2 tsp salt (optional)
2 tbps oil
1 tbsp baking powder
2 tbsp honey (optional)
Put wheat berries and 1 cup of milk in blender. Blend on high speed for 2 minutes or until smooth. Add 1/2 cup milk and blend on high for 2 more minutes. Add eggs, oil, salt, honey. Blend again. Add baking powder and blend. Cook on a hot griddle.
Variation: Ad 1 cup cooked pumpkin, 1/2 tsp ginger, 1/2 tsp cloves, 1/2 tsp nutmeg, and 1/2 tsp cinnamon.

Crock Pot Polenta

3 cups corn meal
8 cups cold water
2 tsp salt
3 tbs olive oil

Place ingredients in crock pot on high.

Sauté together:
3 med onions
2 tbs olive oil
2 tbs water

Add to the crock pot and cook until done.
This will take at least five to six hours depending on the crock-pot.
