Quinoa Tabooli

2 cups quinoa, cooked
1/2 tsp basil
1 cup finely chopped parsley
1/2 cup lemon juice
1/2 cup finely chopped onions
1 garlic clove, pressed
1/4 cup olive oil
1/4 cup honey
salt to taste
1 cup finely chopped carrots, celery and cucumber
1/2 cup finely chopped tomatoes
Place all ingredients in a mixing bowl and toss together lightly. Chill for 1 hour or more to allow flavors to blend.
 Serves 4.

Garbanzo Salad

1 1/2 cup Garbanzo Beans, cooked
4 tbsp. Vegenaise (mayonnaise substitute)
Salt to taste
1/4 cup Onion chopped
1/2  tsp. Parsley
Mash the garbanzo beans, add the rest of the ingredients and mix. Chill.
Use in place of tuna or egg salad.
